White veal

White veal, or also known as a suckling veal, is the one that being either male or female animal, is not older than 8 months  and has been fed exclusively with breast milk. 

There are many suitable breeds, being the most common in Spain the Galician blonde, Pyrenean, Morucha and Retinta, among others. 

This gives the white veal meat a pink and very tender texture, easy to digest and with excellent nutritional characteristics being very low in fat and very rich in protein.
